This exotic-looking cheese is actually five cheeses in one. Each layer
is a cheese traditionally found in the center, or the “heart,"
of England. The cheeses are: Red and White Cheddar, White Stilton,
Double Glouster and Leicester. |

potatoes, peeled and cut |

heavy cream |

Heart of
England Cheese, grated |
| 4 oz. |
bacon,
cooked and chopped coarsely |
| 2 Tbsp. |
chives,
sliced thin |

black pepper |
Boil potatoes in heavily salted water until fork tender. Meanwhile,
bring cream, butter and garlic to a boil and keep warm.
Mash potatoes; mix with cream, butter, cheese, bacon and chives.
Season the potatoes with salt and freshly ground black pepper to
taste.
Serve with your favorite meal.
