Mozzarella Balls

A very pleasing lactic-tasting cheese with a stringy texture. It's great in a tomato salad: simply add virgin olive oil, balsamic vinegar and fresh ground pepper. Also use it as a great melting cheese!

Il Villaggio® Mozzarella Stuffed Rice Balls

2 cups white rice, cooked
2 eggs
1/2 cup Parmigiano, grated
1/2 tsp. salt
1/4 tsp. pepper
4 oz. IL Villaggio® Mozzarella, cubed
2 cups bread crumbs
2 cups vegetable oil

Cook rice according to directions; let cool and mix with the eggs, Parmigiano cheese and seasoning.
When completely cool, mold cheese in the palm of your hand and place a couple of cubes of cheese in the center of the rice. Press rice mixture around cheese and form a ball.
Roll the ball in breadcrumbs and fry in oil until golden brown all over.
Place in preheated 350°F. oven for 8 minutes. Serve with tomato sauce if desired.
