Parmigiano,
grated |

Mozzarella, cubed |
| 2 cups |
bread crumbs |
| 2 cups |
vegetable
oil |
Cook rice according to directions; let cool and mix with the eggs,
Parmigiano cheese and seasoning.
When completely cool, mold cheese in the palm of your hand and place
a couple of cubes of cheese in the center of the rice. Press rice
mixture around cheese and form a ball.
Roll the ball in breadcrumbs and fry in oil until golden brown all
over.
Place in preheated 350°F. oven for 8 minutes. Serve with tomato
sauce if desired.
